Ingredients for 18 balls:
Adjust portions: For 9 balls, halve all ingredients; for 36 balls, simply double them. The ratio stays the same – perfect for meal prep or making larger batches.
- 110g rolled oats (fine porridge oats) 385 kcal
- 125g peanut butter (smooth) 745 kcal
- 115g honey 345 kcal
- 75g peanuts (roasted, unsalted) 442 kcal
- 20g milled flaxseed (or chia seeds) 89 kcal
- 1 tsp vanilla extract + 1/4 tsp fine sea salt 10 kcal
Method:
- Prepare the base: Combine the rolled oats, peanut butter, honey, vanilla extract and salt in a large bowl and mix thoroughly.
- Add the milled flaxseed and stir well – this binds the mixture and adds beneficial omega-3s.
- Chop the peanuts: Roughly chop the peanuts and fold them into the mixture for added crunch.
- Rest the mixture in the fridge for 10–15 minutes to make it easier to shape.
- Shape: Using lightly damp hands, roll into 18 evenly sized balls (approx. 30–35g per ball).
