The Original Recipe: Blueberry Cheesecake Muffins
Ingredients for 12 muffins:
- 250g full-fat cream cheese 635 kcal
- 100g sugar 400 kcal
- 2 eggs (100g) 140 kcal
- 150g blueberries 60 kcal
- 80g butter (for base) 592 kcal
- 150g butter biscuits 690 kcal
- 1 tsp vanilla extract + 1 tbsp lemon juice 13 kcal
Method:
- Preheat the oven to 175°C and line a muffin baking tin with 12 paper muffin cases.
- Finely crush the butter biscuits and stir in the melted butter. Divide the mixture evenly between the 12 muffin cases and press down firmly to form the base.
- In a mixing bowl, beat together the cream cheese, sugar, eggs, vanilla extract, and lemon juice until smooth and creamy.
- Gently fold in the blueberries and spoon the filling evenly over the prepared biscuit bases.
- Bake for 25–30 minutes until set. Allow to cool completely to room temperature, then chill in the fridge for at least 2 hours before serving.
