The Original Recipe: Classic Baklava Dessert
Ingredients for 24 pieces:
- 400g (approx. 16 sheets) Filo pastry sheets (yufka) 1360 kcal
- 250g Butter (for brushing) 1850 kcal
- 300g Walnuts (chopped) 1950 kcal
- 300g Sugar (for syrup) 1200 kcal
- 150g Honey (for syrup) 480 kcal
- 200ml Water (for syrup) 0 kcal
- 2 tbsp (30ml) Lemon juice 10 kcal
- 1 tsp Ground cinnamon 6 kcal
- 1 pinch Salt 0 kcal
Method:
- For the syrup, bring the sugar, honey, water, and lemon juice to the boil in a saucepan. Allow everything to simmer gently for about 10 minutes until the syrup thickens slightly. Remove the pan from the heat and leave the syrup to cool completely.
- Preheat your oven to 180°C (160°C fan/gas mark 4) and lightly grease a rectangular baking tin (approx. 20x30cm).
- Mix the chopped walnuts with the cinnamon and a pinch of salt.
- Melt the butter and brush a thin layer across the base of the tin. Place a sheet of filo pastry inside, brush lightly with butter, and repeat until you have layered 7–8 sheets.
- Spread half of the walnut mixture evenly over the pastry. Layer another 2–3 sheets of filo pastry on top, brush them with butter, and scatter over the remaining nut mixture.
- Cover with the remaining filo sheets and brush the top layer generously with butter. Using a sharp knife, carefully slice the baklava into diamond or square shapes (making approx. 24 pieces).
- Bake the baklava for 35–40 minutes until golden brown and crisp. Immediately pour the cooled syrup over the piping-hot baklava. Allow it to rest for at least 4 hours (ideally overnight) so the syrup can fully absorb.
